Cumin and dried apricot biscotti with melted port salute cheese and vanilla and star anise red pepper marmalade. Creamy sweet and sour garlic roasted beetroot rolled in a savoury herb pancake garnished with sour cream and beetroot shoots. White mushroom and basil cream soup served with a dill and lemon sous vide langoustine tail, crayfish mouse and garnished with butter sautéed wild mushrooms and fresh baby dill. Seared and baked local rainbow trout served on a bed of asparagus with a poppy seed creamed butter sauce, poppy seed flat bread and garnished with candied lime. Fillet of beef medallions rolled in Parma ham served with a port and cabernet sauvignon beef reduction sauce served on creamy chive mashed potato, topped with an oxtail and pepadew panzarotti garnished with a mustard mayonnaise garnished with fresh alfalfa sprouts. Silver dusted rose pink macaroons filled with a light rose water cream. A Meulle feuille of ratatouille garnished with basil foam and fresh basil.
